Sublime Bar & Grill prepares some of the freshest and best local reef and paddock produce in the tropics. This chic restaurant is open to the blue water and gentle breezes, making it easy to while away the hours. Take lunch on the cafe terrace or around the pool.

Sublime Bar & Grill

Delicate crisp fried soft shell crab served with homemade chilli jam, wasabi aioli and flat bread or confit pork belly, baby beetroot and rocket salad with soft herbed Meredith goat’s cheese. Just a taste of what you can expect.

For breakfast, choose from the continental buffet or hot a la carte options. Lunch is served either poolside on the beach, on the cafe terrace or in the restaurant. Dinner is served nightly at Sublime Bar & Grill.

Sublime’s fully licensed bar is open daily from 10am until late for drinks at the bar or delivered to your poolside sunlounge.

CHEF PROFILE

Introducing Head Chef at Peppers Beach Club, Eddie Basich.

Eddie has crafted his culinary style from experience gained in London kitchens, traversing all the way to Victoria, Australia for a taste of the Yarra Valley and now joins Peppers Beach Club in tropical Port Douglas. Eddie is passionate about producing excellent quality dishes, putting his heart into everything he creates. By combining the best and finest local and premium imported produce using skills gained from around the world, Eddie designs dishes that are sure to tempt your palate.
Eddie’s credentials include time spent at award-winning Yarra Valley winery, Tokar Estate and previously the Michelin Star awarded London restaurant, Rhodes in the Square by Gary Rhodes.
As Eddie always quotes, “Life is too short so enjoy great food and wine!” and it is with this mindset that he leads the Peppers Beach Club culinary team.
