Succumb to the delicate flavours of crisp fried soft shell crab served with homemade chilli jam, wasabi aioli and flat bread before delighting in confit pork belly, baby beetroot and rocket salad with soft herbed Meredith goats cheese.
For breakfast, choose from the continental buffet or one of our hot a la carte options while lunch is served either poolside on the beach, on the cafe terrace or in the restaurant. Dinner is served nightly at Sublime Bar & Grill and we welcome you to liaise with our food and beverage staff to arrange your evening dinner reservation.
A beachside barbeque is served every Wednesday and a Mediterranean grill every Sunday in an intimate setting around the Cafe Terrace poolside.
Sublime fully licensed bar is open daily from 10.00am until late. Come in and try one of our many delightful beverages or simply relax by the beach pool and have your beverage delivered to your sunlounge.
In-room dining includes candlelit dinners on your private balcony or you can select your choice of meat in one of our barbeque packs. Create your own dinner by selecting from a choice of delectable options.

Chef Profile - Ralph Campbell
Executive Chef Ralph Campbell is a welcome addition to the team and Peppers Beach Club, Port Douglas.
With over sixteen years of professional experience, Ralph brings vast knowledge and expertise to all aspects of cookery, though his passion is modern Italian cuisine. Ralph has a calm and relaxed disposition, while thriving on the buzz and vibe of a busy kitchen. He believes respect for food is a respect for life and as a cook you must bring soul to every recipe.
