Thomas is an Internationally renowned Chef who has worked in the Cayman Island, throughout Europe at hatted restaurants and joins Peppers Beach Club & Spa from the well known Sassafras Creek at the foot of the Blue Mountains. Thomas Ege has cooked for the former president of the Soviet Union, the Crown Prince of Qatar and the Chancellor of Germany.
Having explored the region's farms and producers, Chef Ege enjoys planning his own winning menu for guests and visiting patrons and has sourced great local product for his new regular lunch and dinner ‘shared’ menus, including native finger limes and Davidson plums which feature in many dishes.

Chef Ege describes his style as 'cross-over kitchen' and says he especially enjoys working in a holidaying environment and mingling with diners after their meals to hear their thoughts.
“I love to cook classic dishes in a modern style with influences of my international experience whilst showcasing the quality variety of local produce that we are so fortunate to have in this region,” says Chef Ege, who has qualifications as a Master Chef and has worked in five-star hotels and renowned restaurants throughout Germany where he was trained, as well as the Cayman Islands, Vienna and around Australia.
