Chef’s Winter in the Highlands Signature Series
Featured each Friday and Saturday night throughout August, Montfort’s Dining Room’s Executive Chef will be treating discerning diners to his Signature Series of irresistible winter dishes. Each weekend, celebrate a winter festival of food with the weekly signature special including dishes such as mustard & herb crusted lamb rack with Dijon mustard & rosemary jus or sautéed loin of venison served with cumquat & orange confit.

Q & A with executive chef - Kartik Kumar
He's into big cat conservation, been blessed by Mother Theresa, and loves the versatility of lemon grass - Kartik Kumar, 50, executive chef with Peppers Craigieburn's exquisite Montfort's Dining Room, shares a few of his passions ...
Describe the style of your dishes at Peppers Craigieburn? They draw on European, Asian, Middle Eastern and North American influences to create flavour sensations and new approaches to old favourites. I like to say that I ensure our food always looks great and tastes great.
What do you love about working in the Southern Highlands? I recently returned after living in Canada for 18 years and I love that we are out of the big city – I'm a big parrot fan, I love Australian parrots and we are blessed with a multitude of parrots here so my wife and I built a birdhouse and every morning I relax with my coffee and feed the birds.
Have you cooked for anyone famous? Yes, the Crown Prince of Japan and Regional Princes of Malaysia, the Prime Minister of India, and when I was in Canada, for stars like Julio Iglesias, Neil Diamond and Bill Cosby.
Do you have a signature dish? We do a beautiful lamb shank here that's my favourite – it's slow cooked for about six hours at very low temperatures and we just use the cooking liquid with all its natural flavour.
How do you make your guests feel special? I go out to as many of the tables as I can and always try to go out of my way to do things for people above and beyond normal expectations.
How do you relax away from work? I'm pretty much a very big conservation man and do a lot of online cheetah conservation work because I grew up in India where my late grandfather worked for the tiger conservation project in India and we grew up hand-rearing tiger cubs.
Does your favourite food to eat, differ from your favourite meals to cook? Very much - although I love to cook Italian food I don't like eating it and my wife is a fabulous cook who is Canadian, but ethnically Indian, so we eat a lot of fabulous Indian and Thai food at home.
What's your most versatile ingredient? Personally I love lemon grass – you can do anything with it. I used to do a nice white chocolate and lemon grass crème brulee in Germany that was like eating silk.
Who would be four people you'd invite to dinner? Barack Obama and his wife – I'm a great believer in that man and his family … he's a pioneer. Also, the great sitar player Ravi Shankar, and Christiaan Barnard, the South African doctor who did the first heart transplant surgery. If I could I'd also invite the Dalai Lama, who I met personally in 1981. The two highlights of my career was meeting him and also receiving blessings from Mother Theresa, when I cooked for both of them.
