Our mineral water has history-not mileage.
Growing up in Melbourne during the 1960’s and1970’s was about magical summer visits to towns like Kyneton, Daylesford and Hepburn Springs. A picnic was shared with the neighbours and the song of cicadas in nearby trees. We filled the boot of the old Vauxhall with bottles of mineral water pumped up from the springs...
With mineral water first discovered in the area in 1836 by Captain Hepburn followed by gold shortly afterwards, it’s no wonder these two natural treasures and the people they attracted have had a strong impact on the development of the Daylesford and Macedon Ranges.
At Peppers Mineral Springs Hotel we bottle our own Spa Country Produce mineral water, both still and sparkling and have it available for guests to enjoy throughout the hotel, including in the organic mini bars.
The Spa Country mineral water is sourced and bottled in the Daylesford & Macedon Ranges with our bottle labels reflecting our connection to mineral water through the original owner/builder of our historic 1864 Villa Parma, Mr Fabrizzio Crippa. Like many of the Italian migrants to the area, he was involved in community service and was on the first committee instrumental in protecting the mineral-water springs from further damage from gold mining. In 1867 the Mineral Springs Reserve was created, making it the first reserve of its type in Australia.
Peppers Mineral Springs Hotel is proud to be associated not only with the Italian history of the Crippa family but able to supply mineral water from the Daylesford & Macedon Ranges region.
Our mineral water is available in lightly carbonated sparkling or refreshing still, bottled in 500ml green bottles.

Spa Country farm
Not only do our menus reflect our use of produce from local farms and suppliers but our very own farm provides an abundant harvest throughout the seasons.
Birch Estate is our owner’s 400 acre farm, located 10km from the historic village of Clunes. The main focus of Birch Estate is breeding rare Highland Cattle and British Whites, along with Hampshire Down sheep. Birch Estate will be one of the first farms to bring these rare breeds to fine dining and restaurants in the region.
Extensive organic vegetable gardens and orchards have also been planted on the farm. Eventually Birch Estate will become the primary source of produce and provisions for The Conservatory and dining room.
