DECO Restaurant at Peppers Springs Retreat & Spa Hepburn Springs is where modern Australian cuisine meets 1930s Art Deco style.
The Deco team have worked with some of the best chefs in the industry today and are taking a lead from a number of fine regional venues.
Their aim is to deliver a modern Australian dining experience with fine wines in a friendly relaxed atmosphere.
"A grand 1930's guesthouse has been transformed into a deluxe retreat, with a plush formal dining room that foreshadows the ambitions of Clinton Camilleri's food. At first glance the menu looks conservative and Frenchified, with balontines, terrines, and roulades jockeying for attention. But on the plate, the chef's classic training is used to fine effect in refined yet witty dishes. A reworked Spanakopita is a case in point; traditional spinach and filo is augmented by couscous, tomato kasundi and pan-fried haloumi. Striking squid ink tortellini are stuffed with smoked trout and daintily complimented by yabbie tails. The impressive plating continues with desserts; an elaborate chocolate and hazelnut tart looks like an Art Deco desk set, complete with fondant pudding, cubed mint jelly and a crisp wafer bracelet". Chef Profile - Clinton Camilleri
Over the last 3 years Clinton has been the driving force behind the emergence of DECO as a well respected, imaginative restaurant. Having lived in the area for the last 6 years, he's cultivated great sources of specialist local produce, such as the much sought after Tuki Lamb, trout and fresh local yabbies. His menus reflect his thirst for knowledge and also his past experience at Sicilian Vespers and Blakes in Melbourne as well as The Lakehouse in Daylesford. He continues to strive for excellence in produce and flavours, travelling regularly to research and explore new ideas.
The Retreat Bar & Guest Lounge
The Retreat Bar & Guest Lounge offers friendly, relaxed environment for beverages and bar snacks either inside by the warm fires or outside in the garden. Room service is also available for dinner each day, however a surcharge applies. Please contact reception should you have any special dietary requirements.
