Wild Birch is the elegant Dining Room of Peppers Mineral Springs Retreat, headed up by one of the Brit Pack’s most recognised Executive Chefs in Australia Executive Chef, Martin Horsley. Recognised within the industry as an inspired chef of the classics, Horsley has a host of Michelin Stars and Hats to his credit. His British upbringing and classical training with the kitchen masters, including the Roux Brothers, Raymond Capaldi and the infamous Gary Mehigan, make him uniquely capable to take over the kitchens of Victoria’s most beloved and iconic landmark country hotel, Peppers Mineral Springs Retreat.
The food philosophy of Wild Birch is based on rural gastronomy, preserving and promoting the regional identity through dishes flavoured by the wonders of nearby nature. Horsley is a fanatic for fresh ingredients, and will draw on the abundance of Daylesford regional fruits, vegetables, and agriculture to create menus that genuinely work with the seasons. The result is a foodie enthusiast’s heaven; merging European elegance with Australian inventiveness and wild country flavours.
Martin spends his spare time overseeing the hotel’s on-site vegetable and herb gardens, as well as the gardens and orchards out at Spa Country’s 400 acre farm, Birch Estate. The ultimate aim is to eventually self supply the majority of fresh produce and rare meats for Wild Birch. It is this dedication to quietly integrating nature’s Super Foods and genuine infusion of fresh-that day/week/month produce that has ensured Wild Birch and Peppers Mineral Springs Retreat’s place as one of the Healing Hotels of the World.

One of Daylesford and Hepburn Spring’s most sought after lounging space from the moment it opened, the Tipperary Bar + Lounge is an stylish establishment perfect for pre-dinner drinks, digestifs, lounging around or just people-watching. The new darling of the drinking crowd is one-part private club and two-part return of old world glamour. The soul of his relaxed haven lies in tradition and warmth, with surroundings that reflects this – quiet, intimate, relaxed and inviting. Sink into deep club chairs and sofas around roaring fires and feel the stress leave your body. The cocktail menu is a simple yet fine tribute to cocktail history; starting with The Sours from the 1800s and striding purposefully on to modern classics. Head here if you want to hang with a well-heeled clientele sipping sublime cocktails, aperitifs and cognacs.

High Tea under The Arches
Recalling the glamour of a by-gone era, Peppers Mineral Springs Retreat serves High Tea under The Arches, in the picturesque setting under the iconic 1930s arches of this heritage country hotel. Settle into the deep cane armchairs and relax over beautiful petit fours, delectable bite-sized sandwiches, piping hot, freshly baked scones with double whipped cream and homemade jams; all elegantly presented on tiered cake stands. Befitting the elegant style of this beautiful hotel, guests are encouraged to dress accordingly for High Tea. Booking in advance is strongly recommended, particularly at weekends. Tables may need to be reserved at least six weeks in advance.

The Conservatory
For cafe style reminiscent of European sophistication, the charming Conservatory at Peppers Mineral Springs Retreat in Hepburn Springs is a rapidly becoming a feature on the regions’ epicurean roadmap. Located on the back terrace of this heritage hotel, The Conservatory opens out to all day sun, and is elegantly furnished with an inspired assortment of soft cushioned banquettes, comfy cane chairs and hanging pendulum cane lamps. Open to the public and hotel guests 7 days a week, The Conservatory serves a gourmet breakfast buffet, deliciously posh casual lunches, afternoon teas and mindblowingly good coffees.
