| Barramundi with king prawns, brandy prawn bisque, fried potato and chive oil.Ingredients:
- 200gm barramundi skin on
- 2 large king prawns
- 5mls chive oil (see recipe)
- 10mls brandy prawn bisque (see recipe)
- Fried potato (see recipe)
- Small bunch baby watercress
Method:- Place barramundi skin side down on a hot pan-leave for 1 minute and turn
- Place into oven 180c for 8 minutes
- In a small sauce pan place a teaspoon olive oil-heat and add king prawns, gently sauté with salt and pepper-remove from heat when cooked
- 1 large main course plate-spoon right across the plate brandy prawn bisque, place barramundi onto the plate-skin side up. Place 2 king prawns onto the plate and drizzle chive oil across the plate, place fried potato cake a side of the barramundi and garnish with baby watercress
