Byron dining boosted by divine new restaurant

The Byron Hinterland has an exciting new dining destination uncovered in the Byron Hinterland with the divine Wilson's By The Creek restaurant at Peppers Coorabell Retreat opening its doors to the public for the first time.

The restaurant's exquisite atmosphere and sensational cuisine - up until now only enjoyed by retreat guests in the idyllic Byron Hinterland – can now be savoured after opening to the public on the weekend.

With the restaurant fully refurbished in mid-2010 and the unique retreat taking on the Peppers mantel in  September last year, general manager Shawn Boyd says the launch of the restaurant to the public will give locals and tourists a fabulous new option in the picturesque region.

In the tradition of Peppers’ reputation for gourmet food and wine, Wilson’s by the Creek serves delicious modern Australian cuisine under the direction of talented Head Chef Adam Hall.

Chef Hall joined Peppers Coorabell Retreat after serving as Head Chef for 12 years throughout the US and Europe on Superyachts, and has featured in many editions of international magazines in Europe, the US and the Caribbean, as well as our own 'Australian Gourmet Traveller'.

Chef Hall is joined at Wilson's By The Creek by newly arrived Chef Glen Mason from Sydney, and both are eager to treat food fans to the exceptional flavours of their new seasonal menu, brimming with local produce including fresh herbs and fruits grown on the property.

“We welcome guests to visit and enjoy everything Wilson's By The Creek has to offer, from beautiful panoramic views of the surrounding hinterland and rainforest, to the lovely architecture of high-pitched ceilings for a spacious ambience, to the tranquil dining atmosphere which continues outside onto the balcony,” says Mr Boyd, Peppers Coorabell Retreat General Manager.

Opening times at Wilson's By The Creek for the public will be Friday, Saturday and Sunday for brunch between 10am and 3pm and dinner between 5-10pm.
