Diners at Australia’s newest luxury property Peppers Coral Coast Resort will be in “Devine” hands with the appointment of the former Executive Chef to Her Excellency the Governor Quentin Bryce heading the talented food and beverage team.
Peppers Coral Coast Resort at Queensland’s Airlie Beach has announced the appointment of Gregory Devine to the position of Executive Chef of onsite Tides Restaurant & Bar, a move certain to whet the appetites of lovers of fine food and wine.
Gregory brings an outstanding culinary background to the position having worked in a variety of leading establishments over a 23 year career. Most recently he was based at Government House Queensland providing his high calibre cuisine to international heads of state, Prime Minister Kevin Rudd and Premier Anna Bligh.
He has also been Executive Chef at Royal on the Park Hotel Brisbane, the Four Seasons Hotel Alice Springs/Ayers Rock and the Matson Plaza Hotel Cairns as well as Executive Sous Chef of Vista International Hotel Melbourne winning multiple awards along the way.
Gregory, whose work has taken him throughout Australia and around the world, said he was delighted to be based in the beautiful Whitsundays with his wife Janiel and two year old son Zane.
“I signed on the dotted line once I saw the view from the kitchen,’’ he said.
“I am excited by the challenge of a lifetime in helping to open a new Peppers Resort and look forward to enhancing and exceeding Peppers’ high standards in food and beverage. And while his flavour creations may be subtle and delicate, his ambitions are rather more bold.
“My goal is for Tides to win best restaurant at Airlie Beach within 12 months,’’ he said.
Gregory will deliver a menu based on organic fruit and vegetables sourced in the local Bowen region, succulent fish and prawns sourced from nearby reefs plus the freshest Queensland scallops, crabs and bugs.
The cuisine is best classified as modern Australian with Asian overtones, served amidst an ambience of casual sophistication.
Highlights include pan seared Hervey Bay scallops with corn and crab risotto; spiced snapper; tempura Asian style fish; prime fillet of aged Black Angus beef with exotic mushroom crust; roast cannon of lamb, citrus spiced duck breast and more.
