The reason behind this menu slant is our Executive Chef’s embrace of the whole ‘Farm to Fork’ concept. The fertile farmlands of the state’s southwest, as well as the vast, pristine fishing waters along the WA coast are the main sources of ingredients that combine freshness with seasonality, resulting in flavoursome combinations that reflect their unspoiled provenance.
Add to that some of Australia’s finest wines, all produced within a few hundred kilometres of Perth, and you are set for an uncommonly delicate but divine dining experience.
The ambience on offer is just as tempting, with the liveliness of an open kitchen complementing the buzz of the lobby location. On a typically sunny day, enjoy relaxed alfresco dining while watching the world pass by on Wellington Street.
On occasions, live bands take to the stage at ‘Stage’; even if you’re not hungry, you can always take in a set while enjoying an offering from our international spirit menu.
If you prefer a more intimate dining experience, many of the succulent offerings from the ‘Stage’ menu are also available served a la carté in your room, with full dining seating if requested.
