There's great reason to celebrate with the new Restaurant Sanctuary opening its doors at the iconic Peppers Guest House in the world famous Hunter Valley of NSW.

A true institution of the Wine Country region, Restaurant Sanctuary (formerly Chez Pok) continues to focus on quality local and seasonal produce, intense but simple flavours and ensures the food style is complementary to the excellent local wines.

The launch of Restaurant Sanctuary has also been timed with a comprehensive refurbishment which has created a contemporary and refined, warm and relaxed atmosphere with a touch of art nouveau romance.

Restaurant Sanctuary exudes the atmosphere of Peppers with black baroque furniture complemented by engraved glass mirrors and flamboyant lighting throughout.

Over the years this Hunter Valley restaurant has earned a reputation for delivering excellent quality food, value and a friendly and professional “Peppers” service style and was recently awarded the Best Restaurant in a Hotel for the Hunter Valley Region at the 2010 Restaurant & Catering Awards for Excellence.

At lunch and dinner there is the chance to indulge in a seven-course degustation menu with matching wines or if you prefer choose from the a la carte menu which changes with the seasons to take advantage of the best local produce. Prices for the degustation menu start at $95 per person including wine and a vegetarian or gluten-free degustation is available for people with special dietary requirements.

Our wine list offers a great range of Hunter Valley wines including aged Semillon, ripe rich Shiraz, tangy Verdelho and even the Italian style Barbera from a local vineyard. Labels such as Brokenwood, Scarborough, Margan and Pepper Tree are featured alongside boutique labels such as The Little Wine Company, Meerea Park and Constable Estate.

For lovers of a sweet breakfast, you must experience Peppers Guest House’s signature breakfast bread and butter pudding!

Restaurant Sanctuary is open seven days offering an intimate fine dining experience in a warm, relaxing atmosphere and welcomes in-house guests, locals and out of town visitors alike.

Chef Profile – Head Chef Restaurant Sanctuary, Michael Bolam

Michael Bolam commenced his career as an apprentice Chef at Restaurant Sanctuary in 2004, under the careful and passionate direction of acclaimed Hunter Chef, Jamie Hartcher. In July 2005 Michael was appointed as Sous Chef at another highly awarded local restaurant, Shaky Tables.

Michael’s career has most recently taken him to the UK where he held the position of Chef de Partie at the esteemed London diner, The Ledbury Restaurant. The Ledbury is owned by acclaimed Australian Chef, Brett Graham and holds an elusive Michelin Star among many other awards.

The wealth of knowledge and experience Michael gained working in one of Europe’s top restaurants is reflected in each new menu at Restaurant Sanctuary.
