Restaurant Sanctuary offers exquisite meals complemented by a wide selection of excellent local wines from which to choose. These are dishes that truly stand the test of time. A veritable institution of the Wine Country region, Restaurant Sanctuary focuses on quality, creating intensely sophisticated yet simple flavours incorporating the rich local and seasonal produce.

On entering the newly refurbished interior, you are immediately enveloped in a warm and relaxed embrace. With a touch of art nouveau romance, this Hunter Valley restaurant exudes the contemporary and refined atmosphere of Peppers with black baroque furniture complemented by engraved glass mirrors and flamboyant lighting throughout. 

Restaurant Sanctuary has a justly earned high reputation for delivering excellence. It is ‘fine dining’ at its best. The outstanding menu is beautifully handcrafted by our highly dedicated and creative Executive Chef Michael Bolam and his talented team. Simply magnificent food is presented for your pleasure in the warm, friendly and professional ‘Peppers’ service style. 

At both lunch and dinner you are presented with the opportunity to totally indulge yourself. Select from either the superb a la carte menu, or from one of Michael’s exciting Degustations with matching wines, and embark on a journey which will delight your palate and scintillate your senses. The degustation menu is very reasonably priced at $95 per person or, for an additional $35 per person, each course can be beautifully matched with specially selected wines from our eclectic wine list. A vegetarian or gluten-free degustation is of course available for people with special dietary requirements.

Our wine list offers a great range of Hunter Valley wines including aged Semillon, ripe rich Shiraz, tangy Verdelho and even the Italian style Barbera from a local vineyard. Labels such as Brokenwood, Scarborough, Margan and Pepper Tree are featured alongside boutique labels such as The Little Wine Company, Meerea Park and Constable Estate.

For lovers of a sweet breakfast, you must experience Peppers Guest House’s signature breakfast bread and butter pudding.

Restaurant Sanctuary is open seven days a week offering an intimate fine dining experience in an inviting atmosphere with exquisite food and welcomes in-house guests, locals and out of town visitors alike.

Chef Profile – Head Chef Restaurant Sanctuary, Michael Bolam

Michael Bolam is a truly dedicated chef who is passionate about his craft and committed to providing total quality service in the culinary arts.

He commenced his career as an apprentice Chef here at Restaurant Sanctuary (then named Chez Pok), in 2004. In July 2005, Michael was offered the position of Sous Chef at another highly awarded local restaurant, Shakey Tables.

Michael’s passion for food, combined with his love of travel, took him away from the Hunter on a mission to search for new ideas and to further enhance his own considerable skills. He went firstly to Sydney, then on to Europe, where he worked in France, and then London for over a year as part of the team at the two Michelin Star Restaurant, The Ledbury.

In 2009, Michael Bolam returned to Peppers Guest House as Executive Chef. Since then, he has brought a new direction and enthusiasm to Restaurant Sanctuary, leading his talented team of young chefs and apprentices to recognition in the Hunter through achieving the award of Best Restaurant in a Hotel/Motel/Resort in the 2010 Savour Australia Restaurant and Catering Awards.

Michael’s wealth of knowledge and experience is reflected in each new exquisite menu at Restaurant Sanctuary. His dishes range in flavour from superb to magnificent. A choice from either his a la carte, or degustation menus will take you on a gastronomic adventure of delight that will tantalise even the most discerning of palates.

It is his sole intention that each person fully enjoy the journey.
