Peppers Cradle Mountain Lodge and Executive Chef Jee Whan Lee, are some of Tasmania’s best known exponents of Tasmanian produce, join us for a gourmet celebration of the Tasmanian food trail as part of our Peppers Food Trail ‘In Season’ Event.
A weekend of fine food and wine including a feature degustation dinner with matched wines hosted by Nick Stock of Gourmet Wine.
Friday 26th April
Self drive tour, Christmas Hills Raspberry Farm, Ashgrove Cheese and Anvers Chocolates.
Three-course dinner including matched wines at Highland Restaurant.
Saturday 27th April
5pm Wine and Cheese Tasting in Cradle Room, hosted by Jeremy Dineen wine maker for Josef Chromy Wines.
Five-course degustation dinner with matching wines, at Highland Restaurant, hosted by Nick Stock.
Arrive: Individual olive brioche, aged balsamic.
Starter: Salmon tataki on frozen watermelon, pickled daikon & carrot, baby herbs, shima wasabi & soy sauce.
Entree: Lamb cutlet, truffle potato mash, roasted peach, watercress & cucumber salad, red bell pepper coulis.
Cleanser: Frozen truffle yoghurt with candied macadamia crumb.
Main: Springfield venison backstrap, asparagus wrapped in prosciuttolino, macerated mixed berries in Tasmanian iced Riesling, soft polenta cake, bush pepper berry tuille.
Dessert: Petit summer fruit cake, leatherwood honey snap, semi dried cherries, goat’s milk ice cream
With matched wines selected and presented by Nick Stock.
