Peppers Masterclass at Salt spices up MasterChef

The top-rating television series MasterChef Australia added a taste of Peppers to spice up their 26 May episode, which featured a Reward Lunch and Masterclass hosted by acclaimed Executive Chef Reuben Radonich from Season restaurant at Peppers Salt Resort & Spa.

In keeping with the philosophy of Season, Chef Radonich’s Masterclass focused on fresh, local produce with an exquisite entrée of Bangalow pork belly braised in tamarind and rock sugar with Tweed River mud crab, green papaya and mango salad, finger lime, and chilli caramel dressing.

The divine dish was also part of a superb three-course Reward Lunch for MasterChef contestants who won a team challenge. The lunch also included a main course of crispy skinned Cudgen reef snapper fillet, scallop filled tempura zucchini flowers, roast vine tomatoes and tomato buerre blanc, finished off with a dessert of coconut pannacotta, dragon fruit sorbet, coconut tuille, palm sugar and lemon myrtle syrup.

Chef Radonich enjoyed submersing the contestants in the rich and diverse flavours of local and organic ingredients from the nearby Gold Coast Hinterland and Northern Rivers produce belt.

“Season aims to deliver a world-class dining experience for guests and to take them on a culinary journey where the produce-trail merges New South Wales and Queensland,” says Chef Radonich.

“We source a lot of local product from the Tweed Valley, mostly fruit and veggies like sweet potato and zucchini, lettuces, lots of herbs and berries, and yuzu, a Japanese citrus. It means the food is fresher and the quality is better, plus we also like playing a role in supporting local suppliers.”

The contestants also enjoyed dinner with Chef Radonich at Season and a night away staying at the stylish Peppers Salt Resort & Spa, arranged following a new promotional partnership between MasterChef Australia and Peppers Retreats, Resorts and Hotels.
