Leading the team at Katers Restaurant at Peppers Manor House, Southern Highlands is Executive Chef, Daniel James. Daniel is an award winning chef who has worked in the hospitality industry for over 15 years. After starting out in pastry, Daniel progressed throughout all areas of Sydney hotels and restaurants before joining Sheraton on the Park. Daniel then moved with the company to Fiji for their re-opening celebrating their $20 million refurbishment. It was there he fell in love with fresh local produce and working closely with the locals.

Daniel worked for Sheraton for 11 years and for the past three years has worked as the Executive Chef at Westin Melbourne. Bringing his wealth of experience and his personal touch to the Peppers team, Daniel is passionate about showcasing the best fresh and local produce. The Katers team continues to ensure guests only receive the finest and freshest quality dishes, bringing the farm to the plate using Manor House’s own produce from the two onsite market gardens.
The new restaurant team alongside Jesse and Brenton look forward to bringing Katers to the next level and creating unique food and beverage experiences for our guests who travel to the Southern Highlands known as a foodie’s paradise.
Daniel’s High Teas have been featured in Melbourne’s Epicure and High Tea Society in addition to his cooking demonstration with Melbourne’s Food & Wine festival.
