At the centre of Peppers Coorabell Retreat lies our signature restaurant, Wilson’s by the Creek.
Offering beautiful panoramic views of the surrounding hinterland and rainforest, Wilson’s by the Creek boasts a grand high pitched ceiling and spacious surrounds perfect for any occasion. Setting a tranquil dining atmosphere that continues out onto the balcony, Wilson's by the Creek is also the ideal dining setting during the warmer months.
In the tradition of Peppers’ reputation for gourmet food and wine, Wilson’s by the Creek serves exquisite modern Australian cuisine under the direction of our talented Head Chef Adam Hall.
The menu is created daily using the freshest local produce available in the Byron Bay region and most fresh herbs together with many fruits are grown on the property.
Wilson’s by the Creek is fully licensed and open for in-house guests for breakfast, lunch and dinner daily and is open to the public Friday, Saturday and Sunday for brunch 10am - 3pm and dinner 5 - 10pm. Wheelchair access is also available. Wilson’s on the Creek is also available for small groups and events.

Chef Profile – Head Chef Adam Hall
Adam has recently returned to Australia after being based in the USA and Europe for 12 years in the capacity as Head Chef on various Superyachts. Food, wine and service were always of the utmost importance and as many clients were well travelled and regularly experienced some of the finest Michelin rated restaurants around the world, there was always an intense demand and high expectation of Adam which was always delivered in the finest of detail.
Adam’s travels have taken him around the world many times over including to some of the most remote locations on the globe. Adam was also personally approached by one of Forbes 500 world’s richest people to be the Consultant Executive Chef for a brand new boutique hotel/villa property located in Jamaica.
After a very successful international career Adam now sets his sight on an equally successful transition back home in Australia. His main goal is gaining national recognition for his skills and with that hopefully comes Chef’s Hat awards.
Adam has been seen in many editions of international magazines in Europe, the USA and the Caribbean, as well as our own Australian Gourmet Traveller. He is very much the perfectionist, always strives to be the best, and has ambitions to help create a dining destination in this new Head Chef role.
