Your choice of menus showcases innovative culinary experiences using the freshest local seafood Port Stephens has to offer with a distinction French, Mediterranean and Asian influence.

Asian duck broth scented with star anis with pan seared scallops and coriander sambal dip will tantalise taste buds while pan seared Barramundi fillet with crushed coriander herb mash accompanied by steamed asparagus and tomato salsa will melt in your mouth.

Our range of menus include a traditional entreé,main course and dessert menu, platter selections and hot and cold canapé perfect for pre-dinner indulgence or relaxed informal receptions. An extensive wine and beverage list is also available along with beverage packages.

The talented Merretts team and your wedding coordinator will work with you to ensure your culinary desires are met. Simply choose from our menus or we can tailor a menu to suit your tastes. Special dietary requirements, such as vegetarian and gluten free can be catered for.
